One gang is one position on the plate. A 1 gang plate holds a single piece, a 3 gang plate holds three side by side. Count the positions on the wall you are replacing and order that size.

Yes. The same switch works as a single pole switch or a 3-way switch. For a light controlled from two places, buy two of these. For three or more places, add a 4-Way Toggle Switch between them.
